“French people are pretty strict on what they like to work with.”

With Julien’s hospitality experience, he knew that in order to operate at maximum capacity, he’d need a POS system that was not only capable, but pleasant to use.

“For a crêperie, you need a system which everyone is comfortable with—as a business owner, but also an employee—and they do enjoy using it, too. French people are pretty strict on what they like to work with, they like to tell you when it's not good.”

But passing the test of pleasing Julien and his fellow countrymen was only half of the story. He needed to know that his team would be equally impressed with Lightspeed.

“You've got the credit system, the split payment, the tips option is a good one. The whole surcharge,10% is easy also on weekends, you know, for Sunday.I think it makes sense to use the whole lot with you (Lightspeed)”

Franquette works at a remarkable pace, posting cover numbers that would make even the most seasoned hospitality veterans quiver. And when you combine these two factors—speed and volume—you need to know that your workflows are as well-oiled a machine as possible.

“I like the whole bump (KDS) because we do so many crepes and so many galettes, it's pretty greasy. Sometimes you lose the docket or just get into the pan and get burned.”

Lost dockets, or those rendered unreadable by the touch of a greasy thumb are not an option for Franquette. There’s too much at stake to leave such things to chance.

“That's why I need to trust a few things when you’re a business owner. It’s obviously your staff, your product, but also your POS system. Because on the big days, like a Saturday, Sunday, when you do 6-7-800 orders, you wanna make sure your system is working.”

Flexible service

“Once you get it right, you start having some really, really good times.”

Offering menu alterations has, historically, been something hospitality businesses have tolerated. The burden is rarely due to a lack of flexibility on the staff’s part, but rather on the part of the business’ POS. Changes usually take time to be communicated properly, and even then the message may get lost in the name of getting the order into the kitchen on time.

Julien found Lightspeed more than capable of stepping up to the challenge and taking the pain away from any alterations his customers might have.

“Taking orders at the table, how quickly the staff read the screen, but also all the changes—because sometimes you have gluten-free, sometimes you have dairy-free, nut-free, with tomato, no avocados—all things like this you can’t find in a normal, a la carte restaurant. So it was really good on Lightspeed’s side to offer us this easy way to change dishes.”
